Turkey with Orange Sauce and White Wine

Method

  • Peel and chop onion and 1 orange and put in a mixing bowl. Add oil, salt,pepper and spices. Mix together and then stuff into your bird! (Keep giblets aside)

  • Brush the turkey with some melted butter season generously and place in a roasting tin, breast side up. Roast in oven (350F) for 30 minutes.

  • Make a baste with juice of 2 oranges, white wine and season with garlic and chicken stock cube, salt and pepper. Baste the turkey with this mixture every 20 minutes.

  • Cooking time is 3.5 to 4 hours for a 10-12lb Turkey with 15 minutes for every extra lb.

  • Orange sauce - cook turkey giblets in 1/4 pint of wine, adding 1 chopped onion, 1 tsp of cornflour (having mixed with a little water), bayleaf and parsley with Juice of 1 orange and grated rind.

    • 1 medium Turkey (10lbs)
    • 1 Spanish Onion
    • 2 Tablespoons oil
    • To taste Salt and ground pepper
    • ¼ tsp Rosemary
    • ¼ tsp dried oregano
    • 2 large glasses White wine
    • 3 Orange
    • 1 clove garlic
    • 1 chicken stock cube
    • -------------------- Orange Sauce
    • 1 onion
    • 1 Celery stick
    • Sprig of Parsley
    • 1 Bay leaf
    • 2 oranges
    • 20z Butter
