Method

  • Heat the oil in a frying pan, add the onion & cook over a gentle heat for 5 minutes. Add the garlic & chorizo sausage & cook for a further 5 minutes, stirring occasionally.
  • Add the potatoes, tomatoes, almonds, vinegar & seasoning to taste. Cook for 2-3 minutes & serve on a bed of fresh spinach leaves.

    • 1 tablespoon olive oil
    • 1 onion sliced
    • 1 clove garlic. crushed
    • 125g chorizo sausage. sliced
    • 500g new potatoes. cooked & halved
    • 50g cherry tomatoes
    • 50g blanched almonds
    • 1 tablespoon balsamic vinegar
    • 50g fresh spinach leaves
    •  black pepper
