Method

  • First, toast the cumin and sesame seeds in a hot dry frying pan until a light golden brown. Add salt.
  • Next fry onion, garlic, chilli and 2 tsp of the seed/salt mix in a dash of olive oil until the onion is soft.
  • Mix this with the lamb and chopped mint and season with black pepper
  • Shape into burgers

  • Serve with hummus in the pittas sprinkling some of the seed/salt mix inside.
  • Ingredients

    • 1tbsp cumin seeds
    • 1tbsp sesame seeds
    • 1tbsp sea salt
    • 1 onion finely chopped
    • 2 cloves garlic crushed
    • 1 small chilli very finely chopped (optional)
    • 1 Olive oil
    • 500g lamb mince
    • 1 bunch mint leaves. ½ chopped
    • 1 Black pepper
    • 4 pittas
    • 150g hummus to serve
    • 1 lemon to squeeze
