Tips
- A healthy and tasty chicken salad with a fruity twist - great on a croissant or in a honey pita. Note: This salad is best if eaten the day after preparation. This allows the ingredients time to mingle, giving a fuller flavor. If desired, use non-fat mayonnaise.
If you like it stronger, then you can add more curry powder with a touch of extra hot chili powder.
If you have no grapes, then raisins are a good substitution. I have used pecans instead of walnuts.
Great served over a baby leaf salad.
Ingredients
- ALL YOU NEED
- 4 skinless. boneless chicken breast halves - cooked and diced
- 1 stalk celery. diced
- 4 green (spring) onions. chopped
- 1 Golden Delicious apple - peeled. cored and diced
- 55 g golden raisins
- 55 g seedless green grapes. halved
- 55 g chopped toasted pecans
- 0.3 g ground black pepper
- 1 g curry powder
- 190 g light mayonnaise
- GARNISH
- to taste Coriander leaves
