Simple 2 Steps To A Fruity Curry Chicken Salad

Method

  • 1. In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together.
  • 2. Garnish with a few little Coriander leaves
  • 3. Serve and enjoy!
  • Tips

    • A healthy and tasty chicken salad with a fruity twist - great on a croissant or in a honey pita. Note: This salad is best if eaten the day after preparation. This allows the ingredients time to mingle, giving a fuller flavor. If desired, use non-fat mayonnaise.

      If you like it stronger, then you can add more curry powder with a touch of extra hot chili powder.

      If you have no grapes, then raisins are a good substitution. I have used pecans instead of walnuts.

      Great served over a baby leaf salad.

    • 4  skinless. boneless chicken breast halves - cooked and diced
    • 1 stalk celery. diced
    • 4 green (spring) onions. chopped
    • 1  Golden Delicious apple - peeled. cored and diced
    • 55 g golden raisins
    • 55 g seedless green grapes. halved
    • 55 g chopped toasted pecans
    • 0.3 g  ground black pepper
    • 1 g curry powder
    • 190 g light mayonnaise
    • GARNISH
    • to taste Coriander leaves
