Method

  • 1. In a bowl, combine the first six ingredients.
  • 2. Combine mayonnaise, lime juice and curry powder, add to chicken mixture and stir to coat. Cover and refrigerate until ready to serve.
  • 3. Cut each slice of bread with a 3-in. heart-shaped cookie cutter.
  • 4. Top with lettuce and chicken salad.
  • 5. Enjoy!
  • Tips

    • I like to use whole meal bread, but this works well with I'm sure any of your favourite bread.

      Use a light or no fat mayo for an even healthier option.

      For a treat..if your ever in London pop in to the Ritz for afternoon tea, I think they will take £12-24 off you though for the pleasure.
