Cut chicken legs into thighs and drumsticks and place in a casserole dish.
Gently fry onions in oil adding garlic when golden, at this stage add any other ingrediednts you like eg sliced mushrooms, pancetta (bacon bits), celery, sliced black olives. Then add tomatoes and season. I love to add fresh thyme and basil or whatever you have. Add a little water and cook for 10 minutes on simmer.
Cover chicken in basic tomato sauce and bake in oven for as long as poss, 1 1/2 hours or so. Would do really well in a slow cooker.
Tips
This basic recipe for tomato sauce costs pence to make and can be prepped in bulk and frozen in bags - makes great chilli con carne, lasagne, tuna casserole, spag bol etc.
This is the cheapest way to buy chicken and it works better like this than with breasts.
Really nice served with mozerella slices added at the last minute!
Have tagged as summer/winter as it depends on what you serve it with. Do with a green salad and grated carrot for a low fat/low carb summer al fresco dish or with buttered rice/mash and veg for a winter comfort-eat.
