Method

  • Put all bran , sugar , dried fruit , & milk
  • into a large bowl , cover tightly & leave over night.
  • Preheat oven to moderate heat [170 C]
  • Add flour to mixture & stir to a smooth batter , pour into a greased, floured loaf tin & put into oven

  • Bake for about 45 mins or until a skewer
  • inserted comes out clean . leave to cool on
  • a wire rack.
  • to serve , cut into slices & spread with butter. Goes very well with a cup of tea
  • Tips

    • For best results I always use a coffee mug
      to measure the ingredients . this should be enough to fill a 2lb loaf tin .
      If you can resist , this cake gets much stickier after a day or two.

    • 1 cup soft brown sugar
    • 1 cup Mixed dried fruit
    • 1 cup whole milk
    • 1 cup self raising flour
