Method

  • 1. Preheat the oven to 200 degrees C (400F, GM6). Toast the sesame seeds in a dry frying pan until golden. - watch these carefully in case they burn! Remove from the pan and set aside.

  • 2. Cut some baking parchment (or cooking foil) into 4 pieces, at least twice the size of the salmon fillets. Please each piece of salmon on a piece of the parchment.

  • 3. Arrange a mixture of the carrot, red pepper, spring onion and ginger strips on top of each salmon fillet. Drizzle over the soy sauce and orange juice.

  • 4. Season with salt and pepper. Carefully fold in the top and bottom of each parcel and then gather up the sides. Gently fold to make four loose parcels.

  • 5. Put the parcels on a baking tray and bake for 15 minutes. Add the noodles to a pan of boiling water and cook, following the instructions on the packet.

  • 6. Remove the fish from the oven and leave to cool slightly before opening the parcels. Serve with the noodles and a sprinkling of sesame seeds.

  • --this would work just as well with chicken breasts. Follow the recipe but bake the chicken slightly longer than the salmon - about 20-25 minutes, or until cooked through.--

    • 2 tbsp sesame seeds
    • 4 slices fresh ginger finely chopped
    • 2 tbsp Soy Sauce (light)
    • 4 tbsp orange juice
    • 4 thick salmon fillets (about 150g/ 5 ½oz each)
    • 1 carrot cut into thin strips
    • 1 red pepper. deseeded and sliced thinly
    • 3 spring onions. cut into thin strips
    • pinch salt
    • pinch black pepper
    • 250 g (9 oz) noodles

    I love this recipe - found it in a cooking book the book man brought to work. It's deliciously light and low in fat and calories - and good for your brain! Easy for dinner parties.
