1. Cook pasta as per instructions, or until cooked al dente. Drain and cover until needed.
2. Add the butter to a small saucepan and let melt on a low heat.
3. When the butter is melted, add the flour and stir until it becomes a paste.
4. Add the milk (approx 1/4 pint), slowly, until the paste loosens and you have enough white sauce for two people.
5. Heat the white sauce until it thickens (approx 5 mins), then add the artichoke hearts to warm through. If the artichoke is not cooked then steaming beforehand will soften them up.
6. Add the white sauce to the pasta along with the pesto and stir in.
7. If needed, place over the heat to warm the pasta again before serving with crusty bread!
I have recently become a vegetarian and have been making the most bizarre recipes! But this was one actually turned out quite well!! I add bacon for my friends!!

Be careful of the pesto as most is not veggie having Parmesan in!

For those of you non-veggies out there, frying some pancetta up to add to it makes it taste lovely!
