Method

  • Add all the ingredients (beetroot chopped thinly or grated) into a bowl, mix so the oil and vinegar coat the leaves, and serve between two plates.
  • Tips

    • I do occassionally eat fish (I know, great veggie, but give me a break I ate meat for 24 years and I'v just found my conscience), so a lovely juicy grilled salmon fillet adds the perfect taste to make this into a main meal!

    Ingredients

    • 2 handfuls rocket leaves
    • 1 beetroots (pickled. idealy the vaccum packs)
    • 1 handful almonds. salted
    • 1 tsp olive oil
    • ½ tsp Balsamic Vinegar (For serving optional)
    • 1 handful Cos / Romaine lettuce. chopped
