Method

  • 1. Heat the oil, add mince and cook for 10 mins or until brown

  • 2. Add the tomatoes, stock, onions, peppers, courgettes, puree, basil, salt, pepper and simmer for 5 mins

  • 3. transfer to oven proof dish and sprinkle breadcrumbs, cheese and bit more basil.

  • 4. Place in a pre-heated oven 200C or Gas 6 for 20-25 mins or until golden.

    • 908g Lean Minced Beef
    • 1 tablespoon Oil
    • 400g chopped tomatoes
    • 150ml Beef Stock
    • 1 green pepper
    • 1 red pepper
    • 6 courgettes
    • 1 tablespoon tomato puree
    • 3 tablespoons chopped basil
    •  Salt and pepper
    • 50g Breadcrumbs
    • 125g Grated cheese
    • 1 onion chopped
