Cod Parcels

" cod parcels, this is the best kind of food, really yummy and good for you. I made it up recently when i was doing a no carb diet, but don't let the fact its healthy put you off Its better than a take-away anyday! "

Ingredients

  • 2 large pieces cod boneless and skinless
  • 200g cooked king prawns
  • 2 red chili thinly sliced
  • 1 lemon thickly sliced
  • handful parsley freshly chopped
  • handful corriander freshly chopped
  • 1 glass full white wine
  • 1 large avacardo
  • ½ a bag good salad leaves

Method

Pre-heat the oven at 200 degrees c / gas mark 6.
Make a kind of make-shift box out of a large double folded peice of tinfoil by laying it flat and scruching the sides. Then lay 1 peice of cod in the middle and cover with half the prawns, chilli, parsley, corriander and lemon.Pour over half a glass of wine and then parcel up the fish, by scrunching up the sides of your tinfoil. It does'nt have to be really neat, just so long as its all parceled up and not to tight.
Repeat the process with the second peice of cod and other ingredients.
cook for around 20mins, until the fish has gone from a trasparent colour to white.
Then rip open the parcel at one corner and pour off some of the liqiud.
Place the fish, lemon , prawns, and chilli mixture on a plate with the avacardo and some salad leaves pouring over some of the lovely cooking juice.
Serve with a large spoonful of mayo, yum.
