Ingredients

  • 1 red cabbage
  • 3oz butter
  •  Salt freshly ground black pepper
  • 100ml vinegar (balsamic or wine vinegar)

Method

Melt butter in a large pan.
Add cabbage and toss in the butter.
Add vinegar and season.
Put lid on pan and turn heat down to lowest setting.
Cook for 30 minutes, stirring a couple of times.

This dish can be cooked fast(30 mins)so that it retains some bite and crunchiness or can be left on a low heat and cooked for 2 hours so it's more tender.
