Seafood Casserole with Rice
Method
1. Drain juice from tins of toms and empty toms in casserole dish
2. Add red pepper, plum toms, basil, salt and pepper into casserole dish and cook for 30 mins
3. Saute king prawns and mushrooms in olive oil with the chillis and garlic and add to casserole for further 15 mins
4. Remove from oven and stir in Mascarpone
5. Cook rice as per packet instructions
6. Serve!
Ingredients
- 4 Red Chilli. deseeded and finely sliced
- 600g chopped tomatoes
- 2 red pepper. deseeded and chopped into chunks (optional)
- 1 box button mushrooms
- 10 Plum Tomatoes
- hand Full fresh basil chopped
- pinch salt and pepper
- 3 cloves garlic- peeled and finely chopped
- 400g King Prawn
- 150g mascarpone
- 1 green pepper
- 200g Scallops. shelled. cleaned and dried
