Method

  • 1. Drain juice from tins of toms and empty toms in casserole dish
  • 2. Add red pepper, plum toms, basil, salt and pepper into casserole dish and cook for 30 mins
  • 3. Saute king prawns and mushrooms in olive oil with the chillis and garlic and add to casserole for further 15 mins
  • 4. Remove from oven and stir in Mascarpone
  • 5. Cook rice as per packet instructions
  • 6. Serve!
  • Ingredients

    • 4 Red Chilli. deseeded and finely sliced
    • 600g chopped tomatoes
    • 2 red pepper. deseeded and chopped into chunks (optional)
    • 1 box button mushrooms
    • 10 Plum Tomatoes
    • hand Full fresh basil chopped
    • pinch salt and pepper
    • 3 cloves garlic- peeled and finely chopped
    • 400g King Prawn
    • 150g mascarpone
    • 1 green pepper
    • 200g Scallops. shelled. cleaned and dried
