Lentils with Red Wine and Spanish Ham

Method

  • In a large saucepan add the olive oil. Once hot add the onions and fry untill softened.

  • Add the lentils and fry for 20 seconds then add the red wine and stock. Cover and cook on a medium heat for 10 minutes then reduce the heat to a low simmer.

  • Add the chunks of ham and then simmer for 1 and a quarter hours allowing the lentils to absorb the liquid. Check on the lentils after an hour incase more liquid is needed and make sure you give it a good stir every now and then.

  • Season and serve with steamed fish with large wedges of lemon!!




  • Tips

    • The recipe is a good one to make your own, I've left the quantities of the ingredients vague as you could cook it with more red wine and less stock etc etc. I find I add a little more stock here n there depending on the lentils.

    Ingredients

    • LENTILS WITH RED WINE AND HAM
    • 500g Puy lentils
    • ½ a bottle Red Wine
    • 1 large red onion. finely chopped
    • as much as you like Spanish Ham cut into chunks (Chorizo or even salted ham could work)
    • 1 pint Vegetable stock
    • 2 tablespoons olive oil to fry

    This is a meal we have on family holidays and I got the recipe from Lou lou! I love it served with fish, its a healthy version of comfort food!
