Pea and Ham Soup

Method

  • 1. Fine chop onion and celery.

  • 2. Place all ingredients in a large pan and boil. Reduce heat and simmer for one hour (until peas are disintegrating).

  • 3. Remove bone from pan, allow to cool, and flake off ham from bone. Skim any gunk that has formed on top of the soup.

  • 4. Return ham to pan and discard bone (don't mix up these 2 operations!)

  • 5. Re-heat if needed and serve.
  • Tips

    • Great with croutons or lemon croutons.

      A garnish of a thin slice of lemon in the bowl works well.

      Sorry about the industrial quantities, but you need this much water to cover a ham bone adequately. Luckily this soup freezes well.

      If you can't get a ham bone, or can only get hold of a puny one, supplement meat with chopped up ham ends from your local friendly deli counter.

    Ingredients

    • 375g Split green peas
    • 1 Med to large onion
    • 2 Trimmed celery sticks
    • 2.5ltrs Water
    • 1 Ham bone
    • 2 Bay Leaves
    • 4 or 5 Juniper berries
    • 1 tsp Crushed black peppercorns
    •  Powdered veg or ham stock cubes to taste
