Method

  • 1.Put sultanas,butter,water in pan ,bring to the boil,simmer for 2 mins,leave until lukewarm
  • 2.Mix flour,bicarb and sugar together in large bowl
  • 3.Mix flour mix and cooled fruit mix together
  • 4.add beaten eggs and chopped cherries if used
  • 5.grease and line TWO loaf tins
  • 6. divide mix between them level tops
  • 7.Bake Fan 155 45 to 50 mins (160 otherwise)
  • 8. check if cooked by inserting needle or cocktail stick in centre.if it comes out not sticky they are done.
  • 8.turn out to cool
  • Delicious sliced on its own or with butter
  • Tips

    • makes TWO LOAVES very moist each should slice into 8 to 10 slices

    • 13oz sultana
    • 2oz butter
    • 12 fl oz hot water
    • 13oz S R Flour
    • ½ teasp bicar of soda
    • 8oz sugar
    • 2 beaten eggs
    • 2oz cherries optional

    Cuts into 10 to 12 slices each loaf,freezes well
