Goats Cheese & Chutney Toast

Method

  • For the Chutney:
  • Put prunes and prune juice in a pan and cook for 5 mins.
  • Add the vinegar, salt and olive oil and cook for a further 5 mins, then mix with hand whisk and leave to cool.

  • Preheat the grill to hot.
  • Cut goat's cheese into slices and place under the grill for 3 mins until golden.
  • Spread some Melba toast/Bruchetta with the chutney and serve with the warmed goat's cheese.

    • Have you ever seen somebody lick the chutney spoon in an Indian Restaurant and put it back? This would never have happened under the Tories.

    Ingredients

    • 100g dried prunes
    • 100ml prune juice
    • 2 tbsp sherry vinegar (other vinegars/fortified wine will work too)
    • 1 tbsp oilve oil
    • 1 goats cheese log with rind
    •  Melba toast/bruchetta
