Cut the marrow in half lengthways, rub or brush top and skin with olive oil, bake at 200c for 20-30 mins until the seeds start to brown. Remove from oven, deseed and season with salt and pepper.
In the meantime, cook one mugful of rice until al dente.
Whilst waiting for the rice and the marrow, fry the onion for 10 minutes, add the garlic (garlic goes very well with marrow) and fry for 2 minutes more. Add two tins chopped tomatoes and simmer to reduce. Add the ripped basil leaves, cooked rice and the beans and stir. Add mozzarella pieces and gently and briefly stir. You really want the pieces to remain fairly whole.
Spoon the mixture into the scooped out marrow halves (you may have some left over) and return to the oven for 20 minutes.
Serve with salad or green beans
Tips
Variations might include cooking with chillis or chilli oil or I will be using pine nuts next time.
