Method

  • Beat the butter and sugar together , add the whisked eggs slowly to the mixture, and fold in the flour. add the milk.
  • Place the pinapple slices in 2 greased 8" victoria sandwich tins. keep the juice
  • Bung the mixture on top.
  • Chuck in the oven for 20 mins or till golden brown.

  • when baked,turn the cakes upside down onto a plate, so that the pinapple is on top.

  • Serve hot or cold with cream or custard...using the juice from the pinapples to flavour either...
  • yum!

    • 2 large eggs
    • 4oz self raising flour.sieved
    • 4oz sugar
    • 4oz margarine or butter
    • 2 tablespoons milk
    • 1 tin pinapple slices in juice
    • pint Cream or custard

    This is the first pudding I ever made, when I was 11. i love it because its is quick and easy, and reminds me of my childhood. Its always a winner, especially with kids!
