The veg can be chopped as large or small as you like.
Chop the onion and and soften slightly in a pan, slice and add the mushrooms, peppers and the garlic(grated). You need to make sure your pan is on a low heat so as not to burn the garlic.
After a minute or two the peppers will have softened slightly now add both tins of tomatoes.
Keep your pan on a moderate heat stirring continuously. once the sauce comes to the boil turn the heat down and add the salt, sugar and oregano.
Let it simmer for a further 5 mins.
Now you have your basic Bolognaise.
The best thing about this recipe is, there's no rules, you can chop the veg as large or small as you like or you can add more peppers and leave out the mushrooms, make it to your taste.
If your making Pizza's blitz some of the sauce and use it as your base.
