Method

  • Pre heat oven to 200c/400f/gas6. Line muffin tray with 12muffin paper cases.

  • Sift plain flour,baking powder and salt into a bowl. Stir in wholemeal flour and caster sugar. Beat the milk, egg, warm melted butter and orange zest together and add to dry ingredients with the marmalade until just mixed.

  • Spoon into paper cases and sprinkle demerara sugar on top. Bake for 20-25 mins until golden brown.

  • Best served warm and on day made.

    • Lovely recipe, nice change from all the usual muffin recipes. I squeezed the juice of the zested orange over the hot muffins - moist and orangey!

    • small pinch salt
    • 1.5oz stoneground flour
    • 3oz caster sugar
    • 6 fl oz milk
    • 1 med egg beaten
    • 4 oz melted butter
    • finely grated zest of 1 orange
    • 4 oz thick cut marmalade
    • 2 tbsps demerara sugar
