Method

  • 1.Put sultanas and butter with the hot water bring to boil and simmer for 2 mins.
  • 2.Allow to cool until lukewarm
  • 3.Mix flour,sugar and bicarb together
  • 4.Mix the flour mix and the cooled sultanas together
  • 5.Mix in the cherries if used and the beaten eggs
  • 6.Grease and line two loaf tins
  • 7.Divide mix between the two and level the tops
  • Bake reg 4/5.fan oven 155 for 45 to 50 mins
  • Heat and time depend on how warm the sultana mix was and knowing your oven
  • Tips

    • Freezes really well..good as a cake.. or heat in microwave to make a quick pudding with custard

    • 2oz butter
    • 12 fl oz hot water
    • 13oz S R Flour
    • ½ teasp bicar of soda
    • 8oz sugar
    • 2 beaten eggs
    • 2oz cherries optional

    Been making this for many years is low fat for the dieters but delicous spread with a little butter
