Ingredients

  • ½lb lentils
  • 2 carrots
  • 1 parsnip
  • 1 small onion
  • 4 tbsp oil
  • 1 heaping tbsp flour
  • 2 bay leaves
  • 1 tbsp spice mixture
  • ½ tbsp spicy paprika paste
  • 1 tbsp mustard
  • ¾ cup sour cream
  • 1 tsp vinegar
  • ½ bunch parsley
  • 14 oz sausages
  •  

Method

Soak the lentils overnight, or at least for 2-3 hours. Clean the vegetables. Chop the carrot and parsnip into small pieces. First saute the onion on hot oil, then add the other vegetables. Sift on the flour, mix well then cover with 11/2 quarts of water. Add the drained lentil, bring to boil while stirring constantly. Add the spices then cook on low heat until tender. Mix the sour cream with a few spoonfuls of the hot soup then add mixture to the soup to thicken. Add some vinegar to taste. Finally, stir in the sausage cut into slices and finely chopped parsley.

This soup is delicious, Andrea. I added wholegrain mustard, and sauteed the slices of sausage in a little oil before I added them.
Is spice mix something you buy in a pack? Or do you mix your own spices? This is what I did, using dried ginger, cinnamon, nutmeg (tiny bit), allspice, cumin and coriander. I'll be interested in hearing what you use.
