Method
1. pre-heat oven to 180c
2. combine milk, oil, yoghurt, and eggs
3. in separate bowl, sift flour, baking powder, bicarbonate of soda, paprika, salt and pepper
4. stir in cheddar cheese, spring onions and sunblush tomatoes
5. add liquid ingredients and mix together quickly
6. spoon into muffin cases
7. sprinkle with parmesan and bake for 20 minutes
Ingredients
- 50ml milk
- 50ml vegetable oil
- 125ml natural yogurt
- 2 eggs
- 185g plain flour
- 1½tsp baking powder
- ½tsp bicarbonate of soda
- ¼tsp paprika
- pinch salt and freshly ground black pepper
- 85g Cheddar Cheese . grated
- 4 Spring Onion. finely sliced
- 75g Sunblush tomatoes (chopped)
- 40g parmesan cheese. grated (for topping)
