this is so easy to make ,mix the butter sugar egg and mixed spice together first till all soft add the dried fruit then add the flour bit by bit if mixture is to stiff add some water till you get a soft mixture,i find the best way to cook this is to put in a small bread tin and bake near the top of the oven .instead of having dried friut i add cocconut this works really well but leave out the mixed spice,cook for around 40 to 45 min or till knife is clean from the middle .

it could be my new oven but i found the cake dry,maybe next time i will put tin foil on top of cake to start with.
