Method

  • Preheat the oven to 180c
  • 1) Mix the flour & salt together then rub in the margarine.
  • 2) Stir in sugar & fruit
  • 3) In a seperate bowl beat the egg & milk together
  • 4) Add the egg & milk to the other ingredients & mix to a soft consistency.
  • 5) In a removable base cake tin grease it with margarine and line with greaseproof paper.
  • 6) Pour the mixture into the tin place in the oven and cook on 180c for 50 mins.
  • 7) Leave in tin to cool then remove from tin onto a wire rack.
  • 8) Cut a slice and enjoy.

    • WHAT YOU NEED
    • 8oz self raising flour
    •  pinch of salt
    • 4oz margarine
    • 4oz caster sugar
    • 6oz Dried fruit. eg sultanas. currants etc
    • 2 eggs
    • 2 tablespoons milk
