Method

  • 1. Heat oil in a large pan and add chicken, sprinkle over the seasoning and cook for a few mins until the chicken is cooked.

  • 2. Remove from pan and set aside on a warm plate, fry bacon, while it is crisping make the dressing by mixing the mayo and the mustard and then cut and toast the bread.

  • 3. Once the bacon is crispy remove from pan, lightly butter the toast and spoon a good amount of the dressing, on one side, of all 4 slices of toast.

  • 4. Then pile on the chicken,bacon and lettice and make up the sarnies, seasoning with salt and pepper to taste.

  • 5. Then open wide,(its big!) and enjoy!

    Ingredients

    • 4 thick slices freshly sliced white bread
    • 2 chicken breast thinly sliced
    • 1-2 teaspoons chicken seasoning
    • handful iceberg lettice
    • for spreading butter
    • 2-3 tablespoons mayo
    • 1 good tablespoon french mustard
    • 5-6 slices smoked back bacon
    • a good grind salt and pepper

    The best chicken and bacon sarnie, this makes a very substantial lunch, or serve it with some skinny fries and salad for an american dinner dinner!
