1. whisk eggs and 7oz of the sugar until thick and creamy
2.warm butter in evaporated milk until melted.
3. stir the egg and butter mix together
4. fold in the sieved flour to make a smooth batter.
5. pour into a greased and lined 8in square tin
6 arrange apple slices on top
Bake170 fan oven,after 30mins sprinkle with remaining sugar bake another 5 to 10 mins
Tips
serve cold or slightly warm with cream can use an oblong tin about 10x8,which makes cake not quite as deep.because it is a batter mix check after 25 mins,insert a sharp knife in centre which should come out clean to see if it is done
