Method

  • Cut leeks and potatoes, saute in butter until leeks are soft.

  • Add in the stock, season with salt and pepper.

  • Simmer for about 20 minutes.

  • Put in liquidiser or food processor if you want it smooth and then add cream.

    • 1 Leeks. sliced
    • 2 medium Potatoes. cubed
    • about 2pts chicken stock
    •  salt and pepper
    • a little double cream (optional)
