Method
Cut leeks and potatoes, saute in butter until leeks are soft.
Add in the stock, season with salt and pepper.
Simmer for about 20 minutes.
Put in liquidiser or food processor if you want it smooth and then add cream.

- 1 Leeks. sliced
- 2 medium Potatoes. cubed
- about 2pts chicken stock
- salt and pepper
- a little double cream (optional)
