Method

  • Grill your sausages.

  • While you are waiting, prepare your vegetables, then:

  • Fry the onions, carrots and garlic until the onion starts to brown.

  • Add the tin of tomatoes and a splash of water, bring to the boil, then simmer for 5 minutes.

  • Add the baked beans, oxo cube, herbs, salt and pepper.

  • Allow to boil, then add a splash of milk. Simmer for 10-15 minutes.

  • *The mixture needs to be quite watery as the sausages will be added once cooked*

  • When cooked, chop the sausages into bitesize chunks and add to the sauce. Stir them around a bit then pour them into a casserole dish.

  • Then place a layer of the thinly sliced potatoes on top of the mixture.

  • Put in the oven for 30 minutes, or until the potato is cooked.

  • Then sprinkle the grated cheese on top and bake for another 5 minutes, or until the cheese is as brown as you like.

  • Serve with chunky garlic or tiger bread and butter.

    • Super recipes and very filling. I found it was better to boil the potatoes on the hob for 15 mins or so, just to make them that little bit softer. Lovely meal.

    • I tried this in Jan 2010 - it was lovely, however very very filling. I found it was better to slightly boil the potatoes for 15 mins or so on top of the hob to make them softer. Very tasty.

    • Gorgeous recipe, very easy to make and filling. The second time I tried it with cheesy mash on top instead of sliced potatoes. It was a big hit.

    • I haven't ooked it yet. It looks appetising but I cannot find the temperature I should have the oven when it syas 'put in oven for 30 mins'.

    Ingredients

    • 1 large onion. finely chopped
    • 1 large carrot diced
    • 2 garlic cloves. finely chopped
    • 1 tin chopped tomatoes
    • 1 Tin Baked Beans
    • 1 Vegetable Stock Cube
    • 6 sausages of your choice (inc vegetarian)
    •  Basil. dried
