Hearty Vegetable Soup

Method

  • Finely chop all the vegetables.

  • Fry the onions and leeks in butter, then add the carrots and potato.

  • Add boiling water to cover the vegetables.

  • Add the oxo cube.

  • Boil for 10 minutes.

  • Add the cabbage leaves (chopped) and boil for 5 minutes more.

  • Blend the mixture in a food processor then return to stove.

  • Add the milk until the soup is at the right thickness. It should turn out a light-mid green.

  • Season with salt, pepper and herbs to taste.

  • Serve with crusty bread.

    • 1 large onion
    • 2 large leeks
    • 1 Large Potato
    • 2 Carrots
    • 3-4 cabbage leaves
    • a knob butter
    • a splash milk
    •  salt and pepper to taste
    •  rosemary
    •  Coriander
    •  thyme
    •  water
    • 1 vegetable oxo cube
