Method
Finely chop all the vegetables.
Fry the onions and leeks in butter, then add the carrots and potato.
Add boiling water to cover the vegetables.
Add the oxo cube.
Boil for 10 minutes.
Add the cabbage leaves (chopped) and boil for 5 minutes more.
Blend the mixture in a food processor then return to stove.
Add the milk until the soup is at the right thickness. It should turn out a light-mid green.
Season with salt, pepper and herbs to taste.
Serve with crusty bread.

- 1 large onion
- 2 large leeks
- 1 Large Potato
- 2 Carrots
- 3-4 cabbage leaves
- a knob butter
- a splash milk
- salt and pepper to taste
- rosemary
- Coriander
- thyme
- water
- 1 vegetable oxo cube
