Zero Point Tomato, Mushroom and Courgette Bake

Method

  • heat in a sauce pan tomatoes, tomato puree, thyme and heat through gently.

  • In a pan spray some fry light and heat through onions mushrooms and garlic

  • Mix together mushroom and onion mix with the tomatoes and pour into a roasting dish and season with salt and pepper

  • Slice the courgette and the tomatoes and lay over the top alternating tomato and courgette so they are half laying on each other.

  • Season the top with salt and pepper and spray over with fry light.

  • Cook on 220 for about 20-30 mins untill blackened round the edges
  • Ingredients

    • 1 can chopped tomatoes
    • 1 clove or garlic chopped
    • 250g mushrooms chopped
    • 1 tbs tomato puree
    • 1 sliced onion
    • 1-2 large courgettes
    • 2-3 ripe tomatoes
    • 2-3 srpays fry light for Spraying
    • to taste salt and pepper
    • 1 tsp dried thyme
