Place foil onto a baking tray and stand peppers on to it.
If your peppers are slightly wonky and don't want to stand up than thinly slice a bit from bottom to make it level - make sure that bottom of pepper is still there though or filling will fall out!
In a frying pan with low fat cooking spray fry off veg of your choice until soft.
Add cooked cous cous and stir everything together.
Stuff the mixture into the peppers and replace the lid. This stops the mixture inside from drying out.
Bake at 200 degrees C for approx 30 mins or until pepper softens.
Peppers may begin to blacken but this is ok.
Remove from oven and remove lids. Add a layer of soft cheese then a layer of bread crumbs.
Grill for a couple of mins until breadcrumbs toast.
