Low Fat Stuffed Peppers

Method

  • Place foil onto a baking tray and stand peppers on to it.

  • If your peppers are slightly wonky and don't want to stand up than thinly slice a bit from bottom to make it level - make sure that bottom of pepper is still there though or filling will fall out!

  • In a frying pan with low fat cooking spray fry off veg of your choice until soft.

  • Add cooked cous cous and stir everything together.

  • Stuff the mixture into the peppers and replace the lid. This stops the mixture inside from drying out.

  • Bake at 200 degrees C for approx 30 mins or until pepper softens.

  • Peppers may begin to blacken but this is ok.

  • Remove from oven and remove lids. Add a layer of soft cheese then a layer of bread crumbs.

  • Grill for a couple of mins until breadcrumbs toast.

  • Serve immediately.

  • Goes lovely with fish.

    • 4 peppers
    • 1 bag cous cous
    • 1 packet mixed vegetables
    • 2 cups soft cheese
    • 2 cups breadcrumbs

    I put this receipe together as I am always trying to eat healthy but get sick of steamed veg! I didn't know if it would work but it was a success.
