Method

  • 1. Wash the Mushrooms and blitz into small pieces in a blender - of course if you do not have a blender just cut them up as small as you can.

  • 2. Place the 4 chicken breasts in a disposable aluminium dish and cover with tinfoil - these will take 30mins to cook at 180degrees.

  • 3. Melt the butter over a low heat and mix in the blended mushroom. Turn the heat up very slightly (between a low and medium)

  • 4. Add the lemon juice and ground black pepper to personal taste, add in 1 tbsp honey and mustard dressing. Add in the Egg Yolks and Creme Fraiche.

  • 5. Whisk gently until sauce thickens.

  • 6. When the chicken has been in the oven for 20minutes quickly bring it out and spoon the mushroom sauce over it. recover with the foil and replace in the oven to cook for the final 10 minutes.

  • 7. Remove from oven and serve as a main. Works well with chips! Sauce also goes well with Steak but since I'm not a lover of Red Meat I always use it for Chicken. Enjoy :)

    • 2 dessert spoons (heaped) Creme Fraiche
    • 85g Butter
    • 1tbsp Lemon Juice
    • To taste Black Pepper
    • 3 Egg Yolks
    • 1tbsp Honey and Mustard Dressing (or just Mustard)

    After buying a similar dish in a local supermarket and subsequently struggling to find it again I had a go at making my own and the results were even tastier :)
