Method

  • Preheat oven to 180°C.
  • Lightly grease a 7-8 inch baking tin (square tin better).
  • Place the butter, soft brown sugar, golden syrup, lemon zest and juice in a large sauce pan and stir until butter has melted.
  • Remove from the heat and stir in oats and figs.
  • Spoon into cake tin, pressing down and bake for about 20 mins until golden brown.
  • Remove from oven and leave to cool in the tin.
  • Once cool turn out onto board and cut into squares.

  • You can add other dried fruits as well - apricots, cranberries, stem ginger etc.

    • 175g Unsalted butter
    • 175g soft brown sugar
    • 2 Lemon zest finely grated
    • 1 Juice of lemon
    • 200g Porridge Oats
    • 200g dried figs chopped
    • 4 tbsp Golden Syrup
