Method

  • ok so i always guess whilst making my cup cakes but i have to say they always turn out perfect, so if you dont need to follow a recipe exactly these are for you! hehe

  • 1. pre- heat oven at about 180oC

  • 2. making sure butter is soft start mixing it untill it's really soft and creamy

  • 3. gradually add the sugar mixing it all the time

  • 4. at this point i always taste it and if its too buttery add a little more sugar!

  • 5. when all the sugar is mixed in add an egg and mix until you have a creamy mixture

  • 6. gradually add the flour, a little at a time so it mixes in easily

  • 7. keep adding it until 2/3 have been mixed in then add the other egg and the vanilla essence

  • 8. add the rest of the flour gradually making sure the mixture has a good consistency

  • 9. you may need to add more flour, make sure the mixture doesn't run of your spoon but that it isn't really thick, if you find it is too thick add another egg

  • 10. spoon in to cases and pop in the oven for about 30 mins

  • 11. keep checking them if you can through an oven window but don't open the door as they will collapse :(

  • 12. when they are a nice golden colour stick a knife in the center of one and if it comes out clean they are ready!

  • 13. leave to cool for about 20 mins and you can then decorate them any way you want!
