Greek Baked Chicken Thighs in Tomato Sauce (Low-Carb)

Method

  • 1. Wash and clean the chicken thighs.
  • 2. Add all the marinate ingredients in a bowl and marinate the chicken for 30 minutes in the fridge or up to 24 hours.
  • 3. Place the chicken thighs in a large baking dish.
  • 4. Bake the chicken for about 1 hour in the middle of the oven on 150 degrees Celsius and turn occasional for even browning.
  • 5. Once cooked and evenly browned, take out the chicken thighs on a plate for the moment.
  • 6. Add to the roasting juices, the chopped tomatoes, sliced onion. Give it a good mix and check seasoning. At this stage I usually add a bit more paprika, salt and pepper.
  • 7. Return the chicken thighs back to the baking dish with the tomato sauce and bake for a further 1 hour, turn occasionally and mix the sauce. For all the flavours to combine and the sauce to reduce.
  • 8. After 1 hour take the dish out of the oven and serve with rice.
  • Tips

    • Tip 1.
      You will see the juices and fat of the chicken will give lots of flavour to the sauce, but you can skim it a bit if your are health conscious.
      Tip 2.
      Serve with Saffron rice and Greek salad on the side.

    • Tin Chopped Tomatoes
    • 2 medium Onions, sliced

    • FOR THE MARINADE
    • 2 Lemons, halved and juiced
    • 1 tsp. Thyme
    • 1 tsp. Oregano
    • 1 tsp. Paprika, sweet
    • 1 tsp.  Pepper, ground
    • 1 tsp. Salt
    • Pinch Sweetener granules
    • 2 Cloves of garlic, minced
