Roughly chop chicken, onion, garlic, carrot and put in blender/food processor with egg, salt, pepper, paprika and parsley.
Blend and add breadcrumbs gradually until mix is of a consistency where you can ball it up and squash it into a pattie with your hands.
Cook under grill or fry in a non-stick pan for approximately 10 mins. Use cooking spray if you are concerned about sticking. The mix should make 4 generous sized patties. Add cheese when you're nearly done cooking so it melts on top of the pattie.
Serve the patties in rolls with salad, mayo, ketchup or chutney.
