1)You chop up your vegetables into reasonably small sizes, it's up to you how many vegetables you use (for two of us i usually do 2 carrots, 2 mushrooms, a handfull of spinach, a whole pepper, half a leek, half a red onion and a few pieces of broccoli.) YOU CAN PUT IN AS MANY AND WHICHEVER VEGETABLES YOU LIKE!!
2)You then put your vegetables into a roasting tin and drizzle with sweet chilli sauce and olive oil.
3)Place in oven (electric fan oven - 180 degrees) for about 30 mins - 45 mins. Keep checking veg and mixing it round.
4)Make your cous cous when veg is done, (up to you how much cous cous you want to make) and then mix veg with cous cous.
5)Squeeze half a lemon ontop of cous cous for extra flavour.
