Roast Vegetable Cous Cous

Method

  • 1)You chop up your vegetables into reasonably small sizes, it's up to you how many vegetables you use (for two of us i usually do 2 carrots, 2 mushrooms, a handfull of spinach, a whole pepper, half a leek, half a red onion and a few pieces of broccoli.) YOU CAN PUT IN AS MANY AND WHICHEVER VEGETABLES YOU LIKE!!

  • 2)You then put your vegetables into a roasting tin and drizzle with sweet chilli sauce and olive oil.

  • 3)Place in oven (electric fan oven - 180 degrees) for about 30 mins - 45 mins. Keep checking veg and mixing it round.

  • 4)Make your cous cous when veg is done, (up to you how much cous cous you want to make) and then mix veg with cous cous.

  • 5)Squeeze half a lemon ontop of cous cous for extra flavour.
