Spicy Tomato Soup

Method

  • Prepare the Vegetables, Peel and slice the onion. Topand tail and slice the Carrot. Peel the Potato and cut into eight.

  • Heat the oil in a large saucepan and add the vegetables (not the tinned tomatoes). Cook for 5 minutes stirring every minute or so.

  • Add the rest of the Ingredients.

  • Stir everything together, bring to the boil and then simmer for 20 minutes.

  • Take off the heat (make sure that the potatoes are cooked and not still hard at all, if so bring to the boil again and simmer until they are soft)

  • Blend this mixture (if using a food processor let cool for a few minutes first,or use a stick blender in the pan)

  • Add a little Sea Salt and plenty of Fresh Ground Pepper.

  • Serve with a dollop of Greek Yogurt or a swirl of cream.
  • Tips

    • If you want a less filling bowlful you can leave the potato out but I prefer a little more thick consistancy. Add extra or less chilli to your taste.

      If you want a nice cream swirl like on the photo the best way is to use a teaspoon to gently drizzle it over,if you pour it directly from the carton it will sink to the bottom.

    • 100ml Water
    • A good shake Chilli Sauce.or...
    • ½ tsp Chilli Flakes
    • 2 tbsp Tomato Purée

    I got this recipe from the Telegraph Sunday Suppliment one winters day and decided to make it for lunch, it's a real winter warmer - serve with some nice bread.
