POTATO PIE (Vegan)

Method

  • PREPARATION
  • 1. Peel POTATOES and cut for boiling.
  • 2. Grind CASHEW NUTS.
  • 3. Peel and chop finely ONION.
  • 4. Open cans of CORN and TOMATOES.
  • 5. Grease PIE DISH.

  • COOKING
  • 6. Boil POTATOES until tender, drain then mash adding MARGARINE and SOYA MILK, then GROUND CASHEW NUTS, ONION and season with SALT. Last of all add CORN.
  • 7. Fill PIE DISH with half the mixture then spread the TOMATOES to make the filing. Sprinkle with MIXED HERBS, SALT and freshly ground BLACK PEPPER. Cover with remaining potato.
  • 8. Press POTATO down and use FORK to make a pattern of ridges over the top.
  • 9. Bake in hot oven 200 degrees C / 425 degrees F for 30 minutes until top is crisp and golden brown.
  • 10. Serve with a green vegetable like SPINACH, BROCOLLI, or CABBAGE.

  • Tips

    • * Try adding some CURRY PASTE when mashing potatoes as a variation.
      * Use up any left-over pie by making POTATO PATTIES. Shape, then roll potato mix in lightly seasoned OAT BRAN, OATMEAL or WHEAT GERM and fry in vegetable oil - excellent with salad!

    • 2½ LBS Potatoes
    • 1 SMALL Onion
    • 8 OZS Ground Cashew Nuts
    • 1 SMALL TIN Sweet Corn
    • 1 TIN Chopped Tomatoes
    • ½ TSP Mixed Herbs
    • 1 TABLESPOON  Vegetable Margarine
    •  Soya Milk
    •  Sea Salt & Black Pepper

    Adapted from vegetarian to Vegan by replacing cheese with GROUND CASHEW NUTS. Result a great success with everyone!
