Method

  • 1. Prepare the fennel by trimming off the outer leaves and cut into small dices. Boil the fennel for 8 minutes in boiling water
  • 2. Meanwhile in a medium sized frying pan, heat half of the olive oil and slowly fry the fennel seeds for 3 minutes, add the garlic and fry for 3 minutes and then add the Seeds of Change Garlic & Chilli sauce and cook for a further 5 minutes
  • 3. Add the fennel to the sauce to warm through before serving
  • 4. Meanwhile pan fry the mackerel on the skin side in a separate frying pan, adding the remaining olive oil, for 8 minutes
  • 5. Plate the fish and spoon the fennel and Seeds of Change Garlic and Chilli sauce over to serve

    • 2 fennel bulbs
    • 40ml olive oil
    • 1 dessert spoon fennel seeds
    • 4 small cloves of garlic
    • 350g Seeds of Change Signature Slow Roasted Garlic & Chilli Sauce
    • 8 mackerel fillets
