Vegetarian Noodle Soup

Method

  • 1. chop shallots, garlic and ginger in to small slices

  • 2. start to fry them in a small amount of water

  • 3. make up the stock with the 800ml of water and pour in to the pan when the garlic etc looks softend
  • bring to the boil and then leave on a lower heat to simmer

  • 4. cut the mushrooms in half and roughly chop the pak choi

  • 5. add vegetables to water and add a little soy sauce

  • 6. add the egg noodles and leave to simmer with a lid for about 5 - 10 mins

  • 7. when the noodles are nice and soft its ready to eat!

    • 2 servings Egg noodles
    • 150g button mushrooms
    • 1 ½ Vegetable Stock Cube
    • 150g Pak Choi
    •  soy sauce
    • 1 slice ginger
    • 2 small Shallots
    • 1 clove garlic
    • 800ml hot water
