Cook the tagliatelle in a large pan of boiling water according to the directions on the packet.
Cook the steam fresh veg according to packet instructions.
Heat the oil in a heavy bottomed saucepan and sauté the onion and garlic granuals for 1 minute.
Add the yellow pepper and sauté for about 2 minutes, add the steam fresh veg and saute for further 6 minutes, stirring frequently
Stir in the crème fraiche and the vegetable stock and bring to a simmer. Stir in the cherry tomatoes and simmer for 2 minutes, then stir in the Parmesan cheese and pepper to taste.
Drain the tagliatelle and toss into pan. Serve with extra Parmesan cheese to sprinkle on top if you wish.
Tips
Servie with Garlic bread or chunky homemade chips!
