Cheesy Veggie Tagliatelle

Method

  • Cook the tagliatelle in a large pan of boiling water according to the directions on the packet.

  • Cook the steam fresh veg according to packet instructions.

  • Heat the oil in a heavy bottomed saucepan and sauté the onion and garlic granuals for 1 minute.

  • Add the yellow pepper and sauté for about 2 minutes, add the steam fresh veg and saute for further 6 minutes, stirring frequently

  • Stir in the crème fraiche and the vegetable stock and bring to a simmer. Stir in the cherry tomatoes and simmer for 2 minutes, then stir in the Parmesan cheese and pepper to taste.

  • Drain the tagliatelle and toss into pan. Serve with extra Parmesan cheese to sprinkle on top if you wish.
  • Tips

    • Servie with Garlic bread or chunky homemade chips!

    Ingredients

    • 200g Tagitelli
    • 1 tbsp Olive oil
    • 1 onion. finely chopped
    • ½ tspn garlic granuals
    • 1 bag steam fresh veg - any variety you prefer
    • 1 small yellow pepper. deseeded and sliced
    • 125 ml creme fraiche
    • 125ml vegetable stock
    • 6 cherry tomatoes. halved
    • 75g parmesan cheese
    • pinch pepper to taste
