Prawn Coctail with A Mexican Twist

Method

  • 1. Wash the lettuce leaves and dry.

  • 2.Chop the tomatoes into small chunks and put in a bowl with the chilli, lime juice, oil, coriander and small prawns. Stir so everything is mixed together and leave to stand for a few mintues.
  • (This could be prepared earlier if having a dinner party)

  • 4. Put a dollop of guacamole on each lettuce leaf then top with the prawn mixture.

  • Don't over load the leaves as you need to be able to pick them up!

  • 5. Either top the leaves with the larger prawns or pile them up on the plate by the leaves.

  • 6. Pick up and and eat away!

  • Tips

    • We had a small bowl of extra guacamole on the side to dip the large prawns in!

    Ingredients

    • 2 or 3 per person Gem lettuce leaves
    • 2 Tomatoes (medium)
    • 1 green chillies. de seeded and finely chopped
    •  Juice of ½ lime
    • 1teaspoon olive oil
    • a handful fresh coriander chopped
    • 100g small cooked prawns
    • 2 or 3 per person Large king prawns (with shells optional)
    • 100g guacamole

    This fresh and delicious recipe is a perfect starter to a mexican feast, follow with a main course of enchiladas! mmmm
