Method

  • Mix filling ingredients in a pan with a tight fitting lid - cook slowly on a low light until tender, thicken with cornflour.
  • Make pastry with the flour, margarine and water then let it rest for half an hour in the fridge.
  • Line a swiss roll tin with half of the pastry, spread on the mushroom filling then top with the remaining pastry.
  • Bake in a hot oven Gas 5-6/375-400 until ready.
  • Tips

    • You could add more mushroom filling if required.

    • 1 small onion grated finely
    • heaped tsp mixed herbs
    • 1oz butter
    •  salt and pepper
    •  cornflour
