East African Sweet Pea Soup
Method
1. Saute lightly onions and garlic in a pot.
2. Add ginger, salt, and garam masala and cook for a few minutes, stirring often.
3. Mix in the tomatoes and sweet potato, stir, then add 2 cups of water.
4. Bring soup to a boil, reduce heat, cover, and simmer for 5 minutes.
5. Add 2 cups of the peas and simmer, covered, for 10 minutes.
6. Remove from heat and add the rest of the water.
7. Puree the soup in a blender until smooth then return to the dish, add the remaining peas, and cook on medium heat for 8-10 minutes

- 2 cups Onion. chopped
- 1 tbsp. Garlic. minced
- 1 dsp. Ginger. grated
- 1 tbsp. Garam masala
- 1 Tomatoes. chopped
- 2 Sweet potatoes. diced
- 3 cups Peas
- 4 cup Water
- to taste Salt and pepper
