East African Sweet Pea Soup

Method

  • 1. Saute lightly onions and garlic in a pot.

  • 2. Add ginger, salt, and garam masala and cook for a few minutes, stirring often.

  • 3. Mix in the tomatoes and sweet potato, stir, then add 2 cups of water.

  • 4. Bring soup to a boil, reduce heat, cover, and simmer for 5 minutes.

  • 5. Add 2 cups of the peas and simmer, covered, for 10 minutes.

  • 6. Remove from heat and add the rest of the water.

  • 7. Puree the soup in a blender until smooth then return to the dish, add the remaining peas, and cook on medium heat for 8-10 minutes

    • 2 cups Onion. chopped
    • 1 tbsp. Garlic. minced
    • 1 dsp. Ginger. grated
    • 1 tbsp. Garam masala
    • 1 Tomatoes. chopped
    • 2 Sweet potatoes. diced
    • 3 cups Peas
    • 4 cup Water
    • to taste Salt and pepper
