Fry 6 large duck breasts n 2 tablespoons olive oil in a wok (skin side down) for about 8 minutes. Turn over, turn heat down and fry for a further 8 minutes. Remove breasts from wok and keep ambient (to prevent continued cooking).
Pour off oil and fat, save around 1 tablespoons. Turn heat up slightly, add chopped onion, fry for 2 minutes, then add 2 tablespoons chopped thyme, juice of 2 lemons and grated zest of 2 lemons. Add 4 tablespoons honey and 2 tablespoons soy sauce and stir over heat for a few minutes. Slice each duck breast into 5 or 6 pieces arrange on individual plates and pour sauce over
