1. Add the rice and pilau cube to a pan of boiling water for about 15 minutes or until cooked.
2. In the meantime, fry the onions with the butter until soft.
3. Add the mince and cook until it is no longer pink.
4. Add the mushrooms, stock, curry paste, garlic and 1/4 mug of water, bring to the boil and simmer for approximately 5 minutes or until all of the water had evaporated.
5. Once the rice is cooked, add it to the meat mixtures and stir until everything is blended together, then add the salt, pepper and coriander leaves.
This recipe should serve one person, but I quite like to make a bit more as it seems to freeze very well.
